Born into families with an amazing tradition of preparing savory southern cuisine in the small town of Vacherie, Louisiana, Nicholas Steib and Sharon Roussell-Steib are giving the world a little taste of heaven with the launch of their catering services, Southern Creole Spices. Recently established, Southern Creole Spices captures the variety of flavors in Creole cooking that has been passed down from generation to generation within their families. Southern Creole Spices offers a wide selection of authentic Creole/Cajun dishes served with warm southern hospitality for any event including: corporate parties, weddings, tailgating and many, many more social events.

His Story

Deeply rooted in a family that has the true soul of Creoles, Nicholas skillfully masters the preparation of delicates, such as Charcuterie (pork stew) found to be a unique dish in Louisiana. Inspired by his elders, who he often saw cook pork stews outdoors in large black pots, Nicholas started cooking Creole dishes at the age of 17. With his warm southern hospitality and a thick Creole accent, Nicholas enjoys outdoor cooking whether he is simply boiling tasty seafood on a warm summer day, frying a spicy turkey for the Christmas holiday, or barbecuing fine pieces of meat to share at a family gathering.
Her Story

Passing on her family’s spicy gumbos and rice dishes, like jambalaya, Sharon, whose great-grandmother is a direct descendent of a Native American tribe from the deep by-waters of Houma, Louisiana, was reared by family members who demonstrated the finest culinary skills in southern Louisiana. Her great-grandmother brought the “flavors of spices” with her from Houma and integrated it into her dishes during southern plantation life in Vacherie. Learning important lessons, like never cooking your food over a fast flame, Sharon prepared her first dish of Louisiana’s famous red beans and rice at the age of 12.
